Creamylicious Banana Pie
Rich & creamy. Even my 7 year old approved! :)
2 cup nuts of your choice , I used a combination of brazils & pecans
1 cup dates
3 tablespoon
agave
¼ teaspoon salt
1 cup cashews, soaked for several hours
6 dates
3 very ripe
bananas
3 tablespoon coconut oil
2 tablespoon agave
dash salt
dash allspice
Crust: Combine the first 2 ingredients [2 cups nuts, 1 cup dates] in your food processor. Pulse until nuts are ground fairly fine. Add next 2 ingredients [3 T. agave & 1/4 tsp. salt] & pulse until well combined & starts to form a ball. Take this mixture & press into the bottom of your pan. Set aside.
Filling: Combine cashews & dates in food processor. Blend until smooth. [May need to add a little water, but be sure to only add a tablespoon at a time or it will become too thin.] Next add bananas. Combine well. Finally add the remaining ingredients & blend until completely smooth. Pour into your prepared crust.
Chill for several hours.
Before serving garnish with sliced bananas & chopped nuts.
Enjoy!

Many times I use dried apricots for pie crusts and raisins for fillings but I think dried mango would be nice with this filling.

This looks like a great recipe! I will have to try this. It seems pretty versatile, as if it could be done with berries or apples instead of bananas! Or maybe combinations! Mmmm..
Also-I don't really eat dates-can someone advise what could be used instead?
