Creamy-Cheesy Coconut
It is satisfying to add various creamy consistencies to your creations. Here is one you don’t come across often. Use it in your favorite recipes or just with fruit, granola, to prepare different spreads or by itself with a bit of sweetener such an agave or touch of raw honey.
3 young coconuts , meat
Kefir Starter or, ½ cup Coconut Kefir
SPOON out meat of three young coconuts
CLEAN any brown skin
off
PUREE in a blender with some coconut water to achieve creamy consistency of yogurt (At this point it is tempting to use it as is)
DISSOLVE the Kefir Starter in warm water or better yet use ½ cup pre-made Coconut Kefirhttps://shop.bodyecology.com/prodinfo.asp?number=BE010
PLACE it in the glass container and leave it covered at the room temperature for one day. Longer it stays more sour it becomes.
