Recipe Directions

1. Spoon meat out of 3 young coconuts. Clean any brown skin off.

2. Puree in a blender with some coconut water to achieve creamy consistency of yogurt. At this point it is tempting to use it as is).

3. Dissolve the kefir starter in warm water or better yet use ½ cup pre-made coconut kefir.

4. Place in a glass container and leave it covered at room temperature for a day. The longer it stays, the more sour it becomes.

they sell it in "supper healthy" stores in LA such as co-opportunity or erewhone. the starter might be more commonly avalable. i make my own with the starter.

Kefir is traditionally is a dairy product, which is milk has been cultured into Kefir, what later became known as yogurt.

Coconut Kefir is non-dairy though using similar principles. It is cultivated with non-dairy Vegetable Starter containing beneficial bacteria such as:

~Lactobacillus plantarum,

~Lactococcus lactis ssp. lactis,

~Lactococcus lactis ssp. cremoris.

~Lactococcus lactis ssp. lactis biovar. diacetylactis

~Leuconostoc mesenteroides ssp. cremoris

All these are has amazing health properties was integrated for thousands of years and are essential for a long healthy life. Later it was researched to be ideal for appetite and weight control as well as alkaline and cleansing blood. Coconut kefir suppresses Candida effect, taking away cravings for sweets and carbohydrates.
