Blend all ingredients together in a food processor. Grind pepper on top.

Alteration: I buy my kimchi at a local organic co op where I can package it fresh myself. It contains: cabbage, carrots, onions, broccoli, cauliflower, sea salt and cayenne. You can ferment your own veggies and make kimchi if you have the patience to wait 2 weeks. I don’t so I haven’t attempted to make my own yet.If you don’t want to use water then you can juice your cucumber instead of processing it in the mix. Replace the water with fresh cucumber juice. I have found that the water, cucumber and avocado help tone it down enough for throat-toleration.

This delish soup will be sure to bring you some CHI! I created this because the kimchi I buy is spicy and irrates my sensitive throat. I really enjoy the taste of it though and had to find a way to “have my chi and eat it too”... so I decided to take cooling cucumber and creamy avocado and make it into a soup!

Great idea! This will inspire me to make my own kimchi. Kimchi used to be too strong for me, but I've definitely acquired a taste for it. :)
