Cracker with carrot and beetroot

My first attempts at making crakers weren't that successful. They were full of oily seeds, and contained only a small amount of vegetables. All in all, they weren't tasty and were also too heavy for my stomach.
I have managed to come up with a fine recipe, made mostly of vegetables. This cracker is not too greasy, but colorful, crispy and delicious. It's not necessary to spice it at all, it's already done by the vegetables.
The ingredients are almost all visible in the picture: beetroot, carrots, onions and the little white dots are the hemp seeds.

Ingredients: 

2 carrots
1 little beetroot
1 little red onion
1 bunch parsley
2 tbspoon hempseed
2 cups yellow flaxseed
salt

Preparation: 

Put the vegetables into the food processor and cut until they're granular. Grind the flax seed and mix it with some water so that its consistence is like that of dough. Mix with the vegetables and hempseed, flavour with salt and mix it well once more.

Dehydrate in the machine, roll out so that it's very thin and dry it completely.

These are fantastic. My kids love them. I used only about a tablespoon of chopped onion to give just a subtle flavor. The carrots and beets give a sweet hint and parsley is packed with nutrition. Also they are just so beautiful.

2. I make crackers usinga lot of

I make crackers usinga lot of mixed vegetable pulp from the juicer (carrot, celery, spinach, zuccini, beet), a small amount of ground pumpkin seeds, a small handful of chia, salt and buckwheaties. They make delicious low fat, very crunchy crackers. I have made them without the buckwheaties too and they are great.

Delaluna, I’v already made crakckers with more veggies, more onion, beetroot and with some zucchini, and with less flaxseeds and it was still good.
The more veggies there are in it, the more crunchy the cracker will be.
You can omit the hemp, or substitute it with some sunflower seed
I think the crackers will be sweeter with more beets. But it wouldn’t be bad that way either.

Thanks for posting this recipe. I'm also looking to make crackers that are low-fat and filled with veggies. I still think 2cups of flaxseed is way too much. Do you think if I tripped the veggies (and add some zucchini, cherry tomatoes), and reduced the flax to 1 cup... would it still taste good?

I don't have hemp, can I just omit it?

What would happen if I added more beets? Would it make it sweeter or would it alter the taste significantly?
