Couscous Salad
Lovely creamy couscous with a salad of sea spaghetti, spinach, beetroot and radish. Comfort food for high summer/Autumn.
half a cauliflower
1 tomato
half an avocado
half tsp cumin,
ground
half tsp oregano, dried
dash sea salt
Place all the ingredients into the food processor and process until it looks like couscous. Warm it up in a pan if you like. To plate up, place fresh spinach and sea spaghetti on a plate. Add a tablespoon of salad dressing ( 2:1 olive oil/cider vinegar,pinch salt). Slice radishes and place round plate. Grate a small beet and place aside. Warm couscous (add a little salad dressing to the mixture if you like it more oily). Place on top of salad, add grated beet and drizzle with more salad dressing if you like. A few sesame seeds would look nice too.

I made this recipe last night and it was delicious. I think the dressing and a little sea salt makes it especially yummy. Even my husband really liked it and he's a bit of a picky eater when it comes to healthy foods :-)

Sea spaghetti is a type of seaweed that looks just like spaghetti, it is my latest favourite food. It is also called 'thongweed.' You can add it into zucchini spaghetti for a meal.
I just put the raw beetroot on the couscous and add extra salad dressing over the top.

Hi Sweet Pea! What are sea noodles? Do you season your beets with anything. I just got some raspberry vinegar and have been using on things. It really wakes them up!
