corn salad mix

Servings:
Serves 1I threw this together with leftovers from the fridge – it was quick and delicious
Ingredients:
1 cob corn
3 vine tomatoes
1 clove garlic, crushed
¼
red onion, finely sliced
1 handful of coriander, finely chopped
1 handful of flat-leaf parsley, finely chopped
1 sprinkle cumin
Preparation:
Carefully slice the corn off the cob using a sharp knife. Add to bowl with all the other ingredients and give it a good mix.
Leave for about 10 mins to combine flavours.

You can't go wrong with a fun vegetable salad. This is definately a summertime party must have.

Thanks Winona, I thought exactly the same thing as I ate it, I didn't realise just how sweet sweetcorn is! I'll try it with avo next time :)

I enjoyed this same salad last night, using only half a tomatoe. Splash some lemon juice on the salad to give it zip. Serve it with avocado slices, if you're so inclined. Fresh corn is ridiculously sweet!
