Corn & Nuts Chowder
I needed a recipe for corn chowder. All the ones I found, or I didn’t have all the ingredients or I thought the ratio of ingredients would work for my palate. So I invented this one (by tasting 18946 times while making it). And it was INSANELY good. I would totally make this in a “non-raw” event and people would still love it.
1½ cup fresh sweet corn, (about 2 corn ears)
½ cup cashews, (soaked, if possible)
½ cup
walnuts, (soaked, if possible)
1 cup water
1 clove garlic , (or more, to taste)
1 teaspoon cumin, (or more, to taste)
2 teaspoon Himalayan salt, (or more, to
taste)
2 tablespoon cold-pressed olive oil
pinch black pepper, (optional)
(Because I have a regular blender, I mixed the ingredients slowly, but you you have a powerful one, I’m sure you can throw it all in).
First I added the corn and water. Then I added the cashews, then walnuts, garlic, condiments and finally, olive oil. Taste to see if you need more salt/cumin/pepper or garlic. Keep blending until smooth.
I only had 2 ears of corn, but I’m sure you can double, triple, etc…the recipe without issues.
