Recipe Directions

Cut corn off of cob and put in large mixing bowl. Dice celery, zucchini, mango, pepper and onion and add to corn. Run garlic and ginger through garlic press, letting juices fall into the bowl as you press (if you don't have a garlic press, mince both and add to mixture). Add cilantro, lime juice, salt, pepper, cumin and red pepper flakes adjusting amount to taste. Mix well and enjoy.

This is DELICIOUS!!!!!!! A friend made it for a brunch and I could not stop eating it! :) I love that the mango is just a small amount of sweet taste every now and then, and the cilantro (used coriander, but it tasted the same) was perfect...also loved how everything was about the same sized diced down to the size of the small bits of corn...

This one is a keeper, fun for picnics! 5 STARS!
