Coconut Pudding with Strawberry Swirl
This is a really rich and yummy pudding. While it's 'pretty' with the swirls, I usually end up pouring more strawberry sauce on afterward because it's just so GOOD that way!
Coconut Pudding:
2 cups young coconut meat
1/2 cup young coconut water
1/2 cup melted coconut oil
1/4 cup Agave Nectar
2 tsp vanilla powder
Strawberry Sauce:
1 cup strawberries
agave nectar to taste
Blend all pudding ingredients until smooth. Spread into glass serving dish or bowl or pie tin or ramekins, however you wish to display it!
Process strawberries and agave in FP or blender, then strain in nutbag to remove pulp and seeds.
Using a spoon, drip strawberry sauce onto pudding and use the tip of a butter knife to swirl
the sauce through the pudding. Refrigerate until ready to serve.
This made two 7x5 glass serving dishes as shown in picture. Enjoy!

Ha! I never looked at it like that! Perhaps a peach or blueberry swirl would have been better... :)

I say this with nothing but affection: The pictures of the pudding look like uncooked bacon.
This would be a good thing to bring to a bacon-themed party (does anyone have bacon-themed parties?) to prove that you can even make raw vegan bacon . . .
