Coconut Lime Granola Bars

Coconut Lime Granola Bars
Servings: 
Makes about 10 bars

I was experimenting.. Turned out pretty good.. All the amounts are approximate.. I just threw it all together and adjusted to my taste…

Ingredients: 

1 cup Pecans, soaked and chopped
1 cup Almonds, soaked and chopped
½ cup Buckwheaties (soaked and dehydrated buckwheat)
½ cup Date paste (more or less depending on how sweet you want it)
Honey, maple syrup, or agave, Optional
1 cup Shredded coconut (or more...)
Lime juice (I juiced 1 lime, but I think a little more would be better)
Lime zest

Preparation: 

Mix all the ingredients in a mixing bowl. Form into bars and place on Teflex sheets. Top with some coconut. Dehydrate for about 20 hours (or until dry) flipping halfway.
Store them in a sealed container in the refrigerator to keep them crunchy…

This was truly amazing! I added some pepitas and honey (as suggested) and it came out great! Next time I will try to make the bars smaller (I made 9) to be a good size for snacking. The size for 9 or 10 is good if you want a complete breakfast bar.

These were delicious. I used the juice of a lime and a half but next time I would use at least two and a half maybe even three limes. I also added a small amount of honey but will definitely add more. We fought over the one I put on the plate but luckily there were more in the cupboard.;)

Kitschy...You could probably just freeze, or refrigerate them!! Or not even that.. I ate a whole lot of it while I was making the bars!! It tastes really good.. The buckwheaties add the crunch to it... I loved it...
