Coconut Ice Cream
This ice cream is so delicious and creamy, you would never know that it has no dairy in it! My “non-raw” friends agree!
Meat from 2 Young Thai Coconuts (the white ones!)
Agave Nectar
Vanilla Extract (or scraped vanilla
beans)
Almond Milk
Blend coconut meat, agave nectar, vanilla, and almond milk. You will have to play around with the amounts. Use only enough almond milk to get a thick creamy mixture. You don’t want it to be too thin. Start with less sweetener, almond milk and vanilla, then add more until it suits your taste. Put the mixture in your ice cream maker and follow instructions, or put it in the freezer until frozen! I think it tastes best with fresh berries on top. :)

I live in Norfolk, 12 miles from Norwich. Our local greengrocer said that he has never heard of them on the 'list' from his supplier. I wanted to try the icecream and the buttery spread from this site. I could ask asda if they are likely to do them. But definitely Tesco, yes. I live in rural Norfolk and so don't have access to an asian shop. I'm disabled as well so I don't get out much. Most of my shopping I do online.

I buy young cocnuts from an Asian shop in Blackburn, Lancashire. Whereabouts in the UK are you? Tesco did go through a phase of selling young coconuts but I havent seen them there for a while but you can always ask.
