Coconut Flax Cakes

Servings:
1-2 people, 4-6 cakesI got this idea from Ani’s breakfast Cakes but I changed it around a bit and like my version better. I am so addicted to these.
Ingredients:
1 cup ground flaxseed
½ cup shredded coconut
¼ cup agave
nectar
.125 cup water (or a little more)
1 teaspoon cinnamon
.33 cup raisins
Preparation:
1. Mix the ground flaxseed and shredded coconut.
2. Mix in all the rest of the ingredients, adjusting water as needed.
3. Form into
patties. Squeeze them gently with your hands. You will make 4-6 cakes.
Here is where you have two options:
Either eat right away while it’s sticky
OR
Dehydrate for 20min-1 hour until warm and a just moist. Serve with fruit, drizzled with agave, or just scarf it down.

I just made some of these. I used date syrup and honey instead of the agave and I added a little cacao powder. I´m thinking maybe some orange juice instead of the water for next time!

I'm addicted to flax cakes too lol...they make you feel so warm inside (i guess it's all that iron) Thanks for the recipe. I adjusted Ani's recipe because I"m intolerant to coconut so I use olive oil and add coconut flavor.

just get rid of the coconut and add more flax.

Made these again today. This time I added chopped raisins,chopped walnuts and added a little more agave. They came out even better than my last post. Tasty and easy to make. Thanks again!

I made these yesterday and let them sit in the fridge over night. They turned out really well! And I topped them with some chocolate sauce, yummy :-)
