Coconut Cucumber Sorbet
I created this recipe for Waterbaby12347 who wrote a post inquiring about either freezing or dehydrating cucumbers. When I saw the post my first thought was sorbet but I had never made this before… so I meditated over what would be good together and out came a beautiful refreshing coconut cucumber sorbet! I used herbs (lemon thyme and shiso!) to jazz it up.
1/2 cup fresh meat from a thai young coconut
1/4 cup water from a thai young coconut
a little under 1/4 cup raw agave
nectar
1 beautiful cucumber, pick your variety... i got mine from my garden
half a pretty n plump lemon
a handful of lemon thyme and shiso
Blend all ingredients together in a food processor, minus the lemon – squeeze that INTO the mix. PROCESS! The longer you process the more it will chop up the coconut meat. I left mine so there were TINY chunks of coconut meat in the mix.
FREEZE atleast 4 or so hours.
I used garden fresh herbs (lemon thyme and shiso!) to jazz up the mix. Other herbs that would be lovely in this include: lemon verbena, french sorrel, lime thyme, lime kefir leaf. You could also replace or add fresh squeezed lime to your mix.

Waterbaby: What's your name dear? I'd rather refer to you by name if that's okay! Shiso, omg, the best ever... it's an Asian herb that's slighty spicy and semi sweet - like basil but not that taste, those properties though. It has grown in so well. I will be really sad if it stops growing as the seasons change. I am trying to ultilize all my garden's offerings right now so thinking of ways to use them in recipes. I love shiso in my kale salads too. Earlier I used it with tomatoes and it was to die for. You know how people top a tomato with basil, salt and pepper and it's the best thing ever? Well, Shiso even tops that!
