Claire's Chocolate Superfood Torte
It was my birthday last week and I really wanted to make a raw cake so after lots of trawling through recipes I thought I’d make one up! Looks like lots but really easy!
* Crust
½ cup raw oat groats, grind to powder in a coffee grinder
1 cup Almonds, ground in a coffee grinder
2 Medjool dates, whole
8 dried dates, whole
½ tablespoon raw carob powder
½ tablespoon cacao powder
1 teaspoon spiralina
½ tablespoon purple corn extract, powder form
1 tablespoon mesquite meal
1½ tablespoon coconut oil
* main 'mousse'
2 cup young coconut meat, approx - from 2 coconuts!
1 advocado, small/medium
1½ cup raw cacao butter, melted
2 tablespoon coconut oil, melted
1 tablespoon Lacuma Powder
½ cup agave nectar
½ cup cacao powder
¼ cup raisins, (or so..) to taste
1 pinch himalayan pink salt
* Chocolate Layer Topping
1 cup grated cacao butter
2 tablespoon cacao nibs, ground a little but still chunky
1 tablespoon cacao powder, heaped
You will see some of the ingredients repeated, as I’ve tried to list them crust through to topping.. As couldnt separate on the list any other way..
Crust is list up to young coconut meat, and that starts the main filling,
up to and including the salt.
Then the topping is the last 3 on the list
As with alot of recipes this is mainly estimated and I would advise you to taste it as you go along.. (Believe me I did.. :0) ) You might decide to add the different powders or leave them out, I’m sure it’ll be lovely either way but I like them..!
After grinding the nuts and oats blend the crust ingredients until they form a nice sticky consistency. I then pushed it into a pie dish lined with clingfilm (saran wrap), just incase it didnt come out!
In the food processor blend all the main ingredients, again adjust to your taste. Process for quite a while if you want it smooth. I kept resting the machine then going again. Pour over the crust & level it out.
Lastly, melt the last bit of cacao butter, mix in the semi ground nibs and powder, pour over the cake & spread out so it covers it evenly.
Its currently sitting hardening in the freezer, I’ll put a pic and taste report on as soon as its set!
30 minutes later (as long as I could wait..) Mmmm, very much a mousse like torte rather than a cake but yum yum yummy.
It was still a little squidgy in the pic so is back in the fridge now..

I used the oat groats dry as they made a good flour, all the other ingredients Kendra were from whole foods, they all have brilliant nutritional value and taste good too. lacuma tastes caramelly and mesquite a little similar but a bit more like honeycomb. Purple corn doesnt taste much but is higher in anti-oxidants than blueberries!
I think the Cacao butter would really make a difference if not in there as it gives flavour and texture as it hardens.

Even my boyfriend who hardly EVER tries my raw stuff likes it!
When I make it again I'll use a spring tin as it was really hard to get out!!

speaking of the lacuma powder, mesquite meal, and purple corn extract...do THEY give the torte a certain flavor or texture or are they just for added nutritional value?

Oh man does that look good! THAT'S going in my recipe box to try for later! Where do I buy lacuma, purplecorn extract, and mesquite meal? I've never heard of them. How about ccao buter? ...I assume that's totally different from coconut oil. ..not familiar with that either. Do these ingrediets give the torte a certain flavor or texture or are they just for added nutritional value?
