To RawKidChef: I see your question below about the cashews in the cookie, but my reply will not show up on the comments, so I’ll answer it here.

I use dry unsoaked cashews, ground in the blender until fine. I was wondering about the oats for you. Did you ever try sprouted, dehydrated, ground oat flour that you make yourself?

Having been lurking behind the scenes for months, this recipe finally prompted me to join so I could comment on how delicious this is! I was hearing the banana on the table also calling to be added along with some coconut water and young coconut. Blended it all together with an extra date and date soaking water, couldn't wait to try it, so I didn't strain it,(though I didn't feel it was necessary) Absolutely AMAZING! Even my 14 year old is drinking it! Thanks! Om Shanti

What a combo evergreen, and your cookies look great - Martha would be proud LOL!

As for subbing other ingredients RawKidChef, hmmm I'm not sure you are going to end up with a Cowboy Cookie, as the cooked version calls for rolled oats. And soaking the cashews is gonna add moisture that you need to soak up somehow. You could add buckwheat flour.. that would soak up the extra water - sprouted dehydrated buckwheat groats - buckwheat is not technically a grain its a fruit and may be easier to digest. Then the coconut may help dry things out. I would suggest getting a firm dough before you add the oils though coz I don't think they will ever 'set' otherwise.

I think it would be great to set up a cookie challenge (for the terminally sweet toothed like myself) - find a SAD cookie and the replicate it in the raw. Maybe setting 'rules' or dietary limits each time if folks have them. So Liebekuchen, with no nuts or Peanut butter cookies no peanuts or oats...I could raid my back issues of MSL for ideas and before you know it we'd have our own TV show!

I want to know how the subbing of oats come out RKC I too have a hard time with too much grains although my kids and hubby cant get enough.

Frenchy, I use unbleached musslin which I purchased at the coop. There 's been some discussion about the dyes, etc. in panty hose and whether or not they might leech. By the way, welcome to Gone Raw. I notice you're in the sunshine state. By any chance are you in the panhandle?

holy cow there is such a thing as a milk straining bag.. my dad told me to use my panty hoes .. where would i get one of these bags .. a whole food store .. or just an online type of thing?

Hi evergreen, with regard to that cookie, is cashew flour the pulp left from cashew milk dehydrated and ground? Or is it just milled, unsoaked cashews? :)

Ah I see, I have trouble with buckwheat as well which is strange. But I don't do well with seeds either. I think adding coconut flour might add benefit. I do have some sprouted dehydrated almond butter, it is almost like a flour consistency so maybe I'll try adding that too. I actually ran out of soaked cashews because I made ice cream yesterday. I will make these in a few weeks when I can get more cashews and let everyone know.

Love the almond idea, but I'm all out of almonds and it takes almost two weeks to get them. But I was thinking I have these great tasting soaked cashews, and I will omit the oat flour and add some ground shredded coconut. As I neither have shredded coconut or coconut oil I will buy these tomorrow at the store and make the cookies tomorrow. That milk looks really good though. I will make some sort of it too.

Those cookies look unbelievable. You should give this milk the title of eggnog! I made it last fall as a similar recipe was in raw food real world and it gave me the idea of warm eggnog. I need to to it with the cookies. Do you think I could use soaked cashews and substitute something for the oats? What's your best guess on a sub (nut) for the oats? I cannot digest the grains well :/ oh well I am sure I could make a great alternative.
