CRUST

1. Put the walnuts and raisins (you could use dates) in a food processor or blender and process till desired consistency.

2. Press into a pie plate.

PUDDIN'

3. In a blender, blend avocados, bananas, and carob or cacao powder. Add a little agave if you like, but the bananas sweetened it up enough for me.

4. In the bottom of the pie plate, layer 1/2 of sliced bananas, then 1/2 puddin', the other half of the bananas, and the other half of the puddin'.

5. Decorate the top with fruit.

This was just an idea I had because my dad loves nanner puddin' pie, the kind with vanilla pudding and Nilla wafers on top.

But this is what I came up with (I love chocolate!) and I took it over to the parents' house on Easter when we all got together.

Didn't say a word about it being raw. It was great!

You could use more bananas but they would turn brown.

You could make more of the crust than you need and save it for the top, and then you could add another layer of bananas and top it with the crumbly crust.

Use your imagination.

I still don't get the whole avocado in desserts thing, but this does look scrumptious..I may have to be brave enough to try it someday.....

superkat92 ...being a big fan of guacamole, I was hesitant to try an avacado in a desert....but it's undetectable and adds a creaminess that is just wonderful!!!
