Chocolate Energy Bars
Perfect for airport days, post gym or breakfast on the run. Maple is not raw, so use raw agave as an alternative if you wish.
2 cup almonds
1 cup hazelnuts
2 cup raisins
¾ cup flaxseeds,
ground
2 tablespoon cacao powder
½ cup maple syrup
½ cup water
1 pinch himalayan rock salt
(optional)
1 teaspoon vanilla or vanilla pod (optional)
Soak the nuts for a couple of hours before prep. Grind the nuts to the consistency you like, but not too fine. Add half of the raisins and process briefly. Turn into a mixing bowl and mix with the flax and cacao powder. Add the other half of the raisins. Add maple syrup, water, vanilla and salt and mix with a spoon until thoroughly combined.
Spread the mixture on a lined dehydrator tray to about a quarter of an inch. Dehydrate at around 100 for 12 hours. Flip and dry for another 12 hours. After this time, cut into bars and dehydrate for another 24 hours until dry.

It seems to be ok when dehydrated, it sort of goes concentrated. I made another batch last week with some left over pineapple and coconut (all blended) instead of the chocoate and raisins. The texture was crispy and made a nice change.

I notice there's not a lot of cacao in this recipe - is it enough to taste chocolatey?
