Chocolate Covered Coconut Bites

Little bite sized coconut wonders.

Ingredients: 

All ingredients are estimates and you can adjust them to your tastes. Nothing has to be exact in this recipe.

- .5 c dates
- water
- 2-3 Tbsp tahini, or other nut butter
- 1-2 c coconut flakes
- favorite chocolate sauce recipe (OR mix 1 Tbsp coconut oil(melted) with cacao powder and
agave to desired taste and consistency)

Preparation: 

1. In blender or food processor, blend dates with enough water to make a thick paste
2. Add tahini, and blend until well mixed in
3. Transfer date tahini mixture to large bowl and start adding coconut. Stir as you go and you can add a lot or a little depending on what outcome you would like. The more coconut you add the stiffer they will be making them easier to make into shapes.
4. Make into desired shape (I made little balls). Put in freezer while you make chocolate sauce.
5. If you want them completely covered in chocolate, roll them in the chocolate sauce. Or you can drizzle the sauce over them.
6. Put in fridge or freezer to allow chocolate to set.
7. ENJOY!

Extra special additions: you can mix some chopped nuts into the chocolate before you dip them, or you can roll them in chopped nuts, coconut, or cocoa powder for an extra special fancy treat!

I made these the other night and by the end of the night my boyfriend had devoured almost all of them! With the exception of the 2 that I ate and the 1 that our roommate ate. I believe he finished off the rest of them the next day. That being said, this recipe makes quite a lot, so if you don't want to eat them all and think you might be tempted, you might want to make half the recipe!

Hi Grace, these do not have to stay in the freezer long at all. Just long enough for the chocolate to harden up which is about 30 minutes max. If you want to roll them in cacao powder I would recommend doing that before you put them in the freezer while the chocolate is still sticky. I'm thinking that if you wait until after the chocolate has hardened, the cacao powder won't stick to them. Good luck!

7. I made these and gave them

I made these and gave them away in little paper gift boxes for the holidays! Instead of using all coconut, I used 1 c. almond pulp and 1 c. coconut. I dipped them in chocolate (coconut butter, cacao, maple) then rolled them in either: lemon zest, dried coconut, spicy cacao powder, or cacao nibs. Then I put one of each in the boxes! YUM. I made a batch of these to give to my friends as a selection box of raw chocolates. They were really easy and tasted great (I had two spare to test!) Unfortunately I got one with date stone in - how dozy am I? They even looked as good as yours did. Thank you for such a great recipe - its like raw bounty bar. I left out the tahini as mine is homemade and very strong and I didnt have any nut butter. Still good though.

Erin! I must say these are absolutely delicious! I made them last night, but they didn't come out as beautiful looking as in your photo :) And I can't stop eating them!! I added A LOT of almond butter and a generous amount of everything else. The turnout - a deliciously soft mushy peanut-buttery tasting batter. And it just occured to me that this would be a great filling for a Rocky Road pie. I will have to try.... thanks!

RawKidChef.- I probably put a good bit more than 1 Tbsp coconut oil in that recipe. It was still pretty dark though. I guess the more coconut oil you put the less intense like dark chocolate it is.
