Chocolate Coconut Pie
This pie is so yummy & satisfying! I make the crust with:
1 cup brazil nuts
1/2 cup raw shredded coconut
3 tablespoons raw agavenectar
Blend well in the food processor & press into a pie plate.
1 large avocado, or 2 small ones
¼ cup raw cacao powder
3 young coconuts, meat only
¾ cup raw agavenectar
1 tablespoon maca powder, optional, but adds a great flavor
Place all ingredients in food processor & blend until smooth & creamy. Put filling into pie crust. I am usually too hungry to wait, but the crust gets a little stiffer if you refrigerate it for an hour or so.
