Recipe Directions

1. Chop cashews coarsely in food processor, then add the dates and vanilla extract. Process until it forms a ball of dough.

2. Take out and knead in the cacao nibs with your hands.

3. Split up into individual servings/pieces.

4. Roll into balls, cookie shapes, bars, whatever you like!

5. Wrap them up and place them in the fridge overnight to firm up. Enjoy!

I made these tonight and they are wonderful! I didn't measure exactly, and it turned out great! I might add a very small amount of salt next time (cashews were unsalted), but they are fine without it. Thanks for the recipie!!
