chocoalate pudding

Servings:
Serves 4Best pudding I have ever had.
Ingredients:
2 cup young coconut meat, (about two young coconuts)
½ cup agave
.33 cup cocoa powder, (or carob
powder)
2 tablespoon vanilla extract, (or 1 vanilla bean)
1 full avacado
½ cup coconut water, more or less depending on thickness preference
Preparation:
Put everything into your blender and blend away. Add more or less coconut water depending how thick or thin you like your pudding. Add a few mint leaves, they are great with it (if you like mint and chocolate). Enjoy!

Bananas are good, but they change the taste a bit.. I tried with papaya and it was really good.. Lighter than with avocado...

well i cant find them anywhere, could you substitue something else for them? banana's maybe?

i tried making this today, and couldnt find young coconuts, and found out the hard way why you need to use young ones lol
i cant seem to find any in my city... do you know where i should be looking?

cashews would work. i have made it without the avocado and it turned out just fine.

This looks delish! I'd like to share it with my Mother but she's allergic to avocado? What would you recommend i use instead? Cashews perhaps?

I had this for breakfast yesterday. I have no shame about doing so, since I reduced the sweetness enough to disqualify it as a dessert! For just myself, I used 2/3 c young coconut, 1/3 avocado, 2t agave, 2.5 oz coconut water, 2T cacao powder, and about 1.5 inches of vanilla bean. You're right, this is the best pudding ever! This recipe is a godsend. Thank you!
