Carrot Spaghetti

Serves 1 very hungry vegan

Deliciously lite and tasty. Adapted from recipe on vegweb

Ingredients: 

2 cup carrots, peeled
1 tablespoon olive oil
sprinkle favorite seasonings

Preparation: 

Peel carrots in long thin strips, I usually use 2 Big carrots. In a bowl combine carrots with oil of choice and seasoning of choice. I have eaten these dehydrated and freshly made, both ways are delicious. These take like 10 minutes to make-literally.

I had this today for lunch with the Spicy fried mushrooms from this site. Everything was mixed together, heavenly good!!!!!!!

vegebaby-I'm glad you enjoyed the recipe. I love how simple and tasty this recipe is. Your seasoning combination sounds really good. Parsnip-I have to try that!!!

I just made this and added a parsnip aswell - really good, but gives it a sweet taste. For seasonings, I used a teaspoon of oil, a teaspoon of balsamic vinegar, half a teaspoon of apple cider vinegar, and vegetable salt. It made a large amount, and it's a known fact that I eat everything that's there even when i'm not hungry, and yet I got full, stopped eating, and yet i feel completely satisfied. Excellent recipe, next time i think i'll try it with vinegar and lemonjuice.

No, actually they are light and soft. Haven't left them in the dehydrator for more than 2 hrs. I wonder if they would get crunchy if left in longer-maybe carrot chips???? That's an idea. I'll have to try that.

When you dehydrate them, is it for quite some time to the effect of making them light and c
runchy? I hadn't thought of this!
