Carrot Soup

Easy curried carrot soup. Although this soup is served room temperature, it feels quite warm.

Ingredients: 

6 carrots, chopped
1½ avocado
2 cup water
3 clove garlic
1 teaspoon powdered ginger
1 small lemon, juiced
2 teaspoon curry powder
½ teaspoon cumin
pinch cayenne pepper
celtic sea salt and pepper, to taste

Preparation: 

Toss all ingredients in blender and blend until smooth. For a pretty finish, sprinkle with curry powder.

omg Kandace! I made this tonight and my tastebuds literally sang! I only had 1 avocado on hand but everything else I did exact. My Fiance remarked how filling it was. I felt I was sitting down to a gourmet dinner albeit economical. There was plenty left over.. lunch tomorrow mmm

WOW! This is the first Raw Food meal that I made, aside from a green smoothie, and this is the way eating was meant to be. This recipe is so full of flavour, and it's nice and creamy. I garnished with some chopped avocado and a sprinkle of cinnamon. Just fabulous, thank-you!

Finally . . . something I made tasted great!!

I always say, "I've been burned at the stake so many times . . . I don't even like to cook!"

Well, now I can be a great non cook raw gourmet chef!! This is my favorite soup so far!

YUM YUM, This is definately a keeper, it was warming and had great flavor. The spice combination is perfect, even my husband commented how good this was. Thank you for sharing this recipe.

p.s. well ... a day late but i just whipped this up a bit ago in the vitamixer
added about 1" of fresh ginger
and substituted garam masala for the curry powder

WOW. I just made this. Some mods: added some almond milk, and added a bit more cumin. Used 2 avocados and 1 1b of carrots. It is almost like a carrot dip or something. Really yummy. I want to make some crackers to put it on. Yum.

This soup was great and VERY VERY WARMING FOR ME (in a totally good way because I am always cold!!!!!!!) So when I started to eat this soup, I began to feel a rush of heat that spread up to my face and it made me go WOAH! Maybe it was the curry. Or maybe the cayeenne, I dunno but its all thanks to the recipe!

wow kandace, ive tried a lot of raw soups and have been dissappointed nearly every time. this however was DELICIOUS! i garnished it with some parsely, and also mixed some shitakes tossed in a touch of shoyu and agave after processing for a "bite".
thank you, i will be making this again!

I just made this, and garnished it with some of my Lighten Up taco meat and extra lentil sprouts. It was lovely and delicious! Kandance, I think this is the holy grail of raw soup recipes! I love it!

Thanks for this AWESOME recipe--so savory and filling but refreshing at the same time. I've made it 3 times in the last 3 days and all of my friends loved it when I served it at a gathering. I can't believe how easy this is to make even in my $20 blender!
