Carrot-Pecan Burgers
A yummy little patty that I make regularly. It was one of my first dehydrator items; I usually put it together in the morning and then they are ready for dinner! Recipe by Alissa Cohen.
4 medium carrots
1 cup pecans
1 cup mushrooms (recipe states "button", but I love using portabellos
too)
1 cup onion
3 tablespoon cilantro
2 tablespoon olive oil
½ teaspoon sea salt
1
pinch black pepper
Remember to add some herbs to taste! The original recipe calls for .5 teaspoon each of dried fennel, coriander, and curry…however feel free to play with this and experiment.
In a food processor, blend carrots until diced. Add the remaining ingredients and blend until smooth. Remove from processor and form into burgers. Place burger on a mesh dehydrator screen and dehydrate at 105 for 7-8 hours.
They darken up in the dehydrator and even resemble a real meat patty, but they taste better than any meat patty!

Hey! It's Katrina, Scott's wife. I didn't see a way to add 'friends' or anything... Anyhoo, I have these in the dehydrator right now, and they do smell amazingly 'meaty' only much better annd earthy.

We LOVE it! I just had them with a salad. Next time, I will do an open face with marinated mushrooms, onion, tomatoes, and avacado.

I have not been on the forum recently, as I received my Excalibur! Yeah! I tried this recipe and I made it for the SECOND TIME today! LOVE IT! LOVE IT! LOVE IT!
I put 1tbsp dried cilantro and 1tbsp sage, b/c I don't like cilantro much. I used baby portabella mushrooms! My kids love it too! :-)

These are delicious. Don't leave out the fennel - it really makes it special (at least for an anise/fennel/licorice addict!). My non-raw friend loved these - I tucked a few in an Ezekiel tortilla with nut butter dressing (see recipe), lettuce & tomatoes.

These are awesome. They have a similar texture to the veggie burgers I used to eat. You can play with the seasoning, I didn’t have three of the spices the recipe asked for so I put in what I had and they still taste great. You can also customize this to meatloaf and taco meat.

I have the book by Alissa Cohen and I tried this recipe. I didn't have any mushrooms but it still tasted great! the curry sauce she recommends for the recipes gives it an extra notch.
