Carrot Chew Bars
I whipped this up early this morning when I awoke with a serious craving for something of a dessert nature. These bars are nicely chewy & totally satisfying for the tummy.Youll feel good & energyzed after a few small
bars.
You might want to experiment with the consistancy of the mix while processing. I just sort of spooned out some peanut butter & didnt really do any exact measuring.
2 Medium Carrots
5 tablespoon Homemade Peanut Butter
3 tablespoon Raw Honey
Wash 2 medium carrots. Dice into multiple pieces. Process in food processor. Then add 4-5 tablespoons homemade peanut butter & process. The mixture will shortly thereafter form into a ball swirling around the inside of the processor. This means its pretty much done. Sculpt into whatever size bars you wish to have & enjoy one of natures candies!

This is very tasty! My blender isn't that great, so it all just came out as mush, so I ate it with a spoon. Still, very yummy!

I think using the pulp with really disrupt its texture. The processed carrot offers a lightly crispy, somewhat coconut texture. Whereas the pulp is soft, smooshy cake~life. When I eat these, I really apreciate the carrot crisp to it mixed with the heavy quality of the peanuts & sweetness of the honey.

Couldn't you use the pulp from juicing carrots?

Ah, I almost forgot that I added a pinch of honey as well

That would probably be helpful, right. :-)
Ingredients:
1 1/2 c. unsalted peanuts
1 tbsp. peanut oil
Mix the peanuts with the peanut oil, and pour the mixture into the food processor.
Process the mixture until it's very smooth.
