Recipe Directions

1. Wash the carrots and dice into multiple pieces. Process them in the food processor.

2. Then add 4 to 5 tablespoons of homemade peanut butter and continue processing. The mixture will shortly thereafter form into a ball, swirling around the inside of the processor. This means it's pretty much done.

3. Sculpt into whatever size bars you wish to have and enjoy one of nature's candies!

You might want to experiment with the consistency of the mix while processing. I just sort of spooned out some peanut butter and didn't really do any exact measuring.

This is very tasty! My blender isn't that great, so it all just came out as mush, so I ate it with a spoon. Still, very yummy!

OMG !!!!! this so awsome, thank you for this one. only mine is kinda soft i am hopeing they will harden up in the fridg. I am sure it was something i did wrong with my peanut butter but they taste absolutly RAWSOME... I will enjoy even if i have to enjoy with a spoon.

I think using the pulp with really disrupt its texture. The processed carrot offers a lightly crispy, somewhat coconut texture. Whereas the pulp is soft, smooshy cake~life. When I eat these, I really apreciate the carrot crisp to it mixed with the heavy quality of the peanuts & sweetness of the honey.

That would probably be helpful, right. :-)

Ingredients:

1 1/2 c. unsalted peanuts

1 tbsp. peanut oil

Mix the peanuts with the peanut oil, and pour the mixture into the food processor.

Process the mixture until it's very smooth.
