Cardamom Plum Delight

Cardamom Plum Delight
Servings: 
Makes about 2 cups

I had a bag full of plums from my farmer’s market that were going to go bad soon, so I wanted to use them up. Came up with this yummy snack! This would make a divine fruit leather, as well, I imagine.

Ingredients: 

4 plums
1 banana
sprinkle cardamom
sprinkle allspice
dash sea-salt, (opt)
sprinkle almonds, soaked/dehydrated (makes them crunchy!)

Preparation: 

Puree plums and banana in food processor until liquefied (if you want it thicker, add another half or whole banana). Sprinkle a very light bit of cardamom over the top, then a bit of allspice, then salt, if desired. Pulse briefly to combine. Taste and adjust, if necessary.

Serve like a smoothie, or like a soup, with some chopped almonds stirred in! The almonds complement the plum perfectly.

Oh, I must add: My mom, who is an omnivore and loves sugary-sweet snacks (always says my food is ‘bland’ and ‘nasty’), tried this; she took the bowl from me and ate ALL of it! Thankfully, I’d already had a bowlful this morning! Maybe I’m slowly winning her over – one snack at a time ;-).

You're welcome! I know, aren't they delicious?! I believe they can be used in savory dishes , as well. Lots of middle-eastern type things. Good luck and hope you find some yummy stuff! :D

Just wanted to come back ... I made this this morning as a breakfast pudding [I added an extra banana as suggested]. It was really, really good. I'd honestly never used those spices [that I was aware of, except for maybe in chai?]. Hopefully I can figure out some other uses for them because I really like the flavor. Thanks for this recipe! :)
