I stumbled upon this idea last night when I noticed brazil nuts are a perfect fit inside dates, seem to belong together, and Woohoo!! That’s all I can say! I am so proud!
Measurements below are estimated, I eyeballed, I will update if necessary when I make more, I had two batches last night, so I don’t know when that will be, haha
½ cup medjool dates, stoned and soaked
½ cup brazil nuts
reserved date soak water
vanilla extract, optional
Depending upon your kitchen tools you may want to powder the nuts first otherwise: blend (or in magic bullet) the dates, nuts, salt and a few splashed of reserved soak water, adding more when necessary.
Use on anything! I even threw a tablespoon or so into the freezer and voila! this morning it was caramel icecream!! Take that, Haagen Daz ;)
