Cafe Gratitude Strawberry shortcake

I made this cake for my sons 10th birthday. Last year I looked at the recipe and felt overwhelmed this year I tried it and it is sooo good. Just want to post incase someone has a kid birthday coming up, or an adult. It just feels so important to make special stuff for raw kids on an occasion like a birthday.

I've never used date paste before. I looked it up on the internet and it comes as power or paste.. which one did you use?

STRAWBERRY CAKE

24 ounces date paste (weight)
3/4 cup coconut oil
3T liquid vanilla
1t salt
8 cups almond flour
3 cups strawberries (12 ounces)
1/4 cup lemon juice
1T beet juice for color

WHIPPED CREAM FROSTING
2 cups soaked cashews
2 cups coconut milk
1/2 cup agave syrup
1T lemon juice
1T liquid vanilla
1/8 t salt
2 T lecithin
1 cup coconut oil

1cup chopped strawberries for top

Well, recipes, as in lists of ingredients, cannot be copyrighted. Only written descriptions of the process. So as long as you don't post the process word for word, it's legal : )

Thank you. I wanted to put up the recipe but my husband said he worries about the copyrite thing. So i figured I would put up a picture and where the recipe is from and maybe inspire someone who has a kiddo with a Birthday coming up. My boys loved it!

I love Café Gratitude! I have had this at the actual restaurant in mission. Delicious. Unfortunately I just found out that the majority of their nuts are pasteurized : (. So I guess I will have to make their desserts from scratch from now on. Anyway, this looks beautiful. Great job!
