I recently went to the farmer's market and bought two cactus fruits. I've also seen them at Mexican markets. They taste like a cross between a melon and a pear and usually are pink or yellow. They were full of hard seeds so I blended them and made this delicious non-acoholic cocktail!

Ingredients: 

2 cactus fruit
1 cup young coconut water
squeeze of lime

Preparation: 

Cut the cactus fruits in half and scoop out the fruit. DO NOT EAT THE SKINS!!!!!! Just the insides. Add the fruit and coconut water to a blender, blend, and then strain through a sprout bag. You don't need to blend too long 10-20 seconds should do in a Vitamix. Finish with a squeeze of lime. Delicious and refreshing and I didn't miss the alcohol. Hi Jodi. I didn't know what to do with them either, they are sooooo seedy but I found that they make a great drink. I'm so glad you enjoyed the recipe!

It's called many different things including prickly pears, cactus figs, Indian fig, or tuna, It's the fruit of the nopal cactus. In California we have them growing everywhere and right now is the season for them. I got them at my local farmer's market.
