This is a fine dish for a filling lunch. Add some salt and pepper to your tastes. I’d also usully add some pine or other nuts, coarsly broken, and some peppers of a type that you like… for me nothing beats jalapenos.
1 can kidney beans, drained
1 can wax beans, drained
1 can green beans, drain of juice
1 can garbanzo beans, drain of juice
1 cup Bell pepper, any color, chopped 1/2 inch
½ cup onion, chopped 1/2 inch
½ pound raw cactus (nopales), chopped 1/2 inch
1 bag cilantro, chopped 1/2 inch
1 pound tomatoes, chopped 1/2 inch
1 can sweet corn, fresh off cob or frozen is best
Just toss all the ingredients together, chill for an hour or so, and you’ll have a nice little meal. If you can get the beans, tomatoes and corn fresh without being canned, all the better.
