Butternut Couscous Salad

About 2 cups. Served two as main, but would be better as a side dish for more-

Summery salad with a heady mixture of flavors and textures. Also extremely versatile, easy and filling. Go make it now!

Ingredients: 

½ medium butternut squash
½ small onion, chopped finely
½ bellpepper, chopped
½ cup red grapes, quartered
.125 cup sundried tomatoes, soaked and chopped
olive oil, to taste
lemon juice or vinegar, to taste
1 tablespoon curry powder
½ tablespoon cumin
1 teaspoon powdered coriander
nuts or seeds, to garnish

Preparation: 

Peel and chop squash, and whizz in blender until it is grainy, resembling couscous. Fold in onion, bellpepper, grapes, sundried tomatoes. Add olive oil and vinegar to taste. I used maybe an eighth a cup of oil and a bit more vinegar ( was out of lemons. Lime would be good too) Add in spices and stir, garnishing with nuts or seeds of your choice. I used cashews which were really yummy in this.
Fresh herbs, especially cilantro would be amazing in this
