"Bun" or Vietnamese Noodles Salad
More on a traditional Vietnamesw dish. Enjoy!
Part 1: Preparing the Veggies
Ingredients
• 1 medium carrot, julienne
• 2 medium cucumbers,
julienne
• ¼ cup thai basil, chopped
• ¼ cup mint leaves,
chopped
• Bunch cilantro
• 2 big heads of romaine lettuce,
chopped
• Beansprouts or any sprouts (optional)
• Kelp noodles, soaked overnight in 1 tsp salt – it should soften
Prepare all the ingredients and set that aside.
Part 2: Pecan Sauce
Ingredients
• 1 handful of pecans or 1 cup
• ½ cup coconut
meat
• 1 cup coconut water
• Thumb size ginger,
minced
• 2 tbsp almond butter
• 1 jalapeno pepper, remove
seeds
• ½ cup filtered water
• 2 tbsp agave
nectar
• 1 lemon
• ¼ cup nama shoyu
Blend all ingredients together until smooth.
Note: For a spicier version add 1 more jalapeno and leave the seeds in.
Part 3: Spicy Nuts Topping
Ingredients
• ¼ cup pumpkin seeds
• ¼ cup pecan
seeds
• 1 tsp paprika
• 2 tsp chili pepper
flakes
• ½ tsp chili powder
• 1 tsp agave nectar
Crush the nuts into little chunks using mortar and pestel. Place nuts in a bowl and mix in the rest of the ingredients.
Part 4: Assembly
Arrange in a bowl from bottom to top:
• All the veggies in Part 1
• Spicy Nut Toppings from Part
3
• Nut burger, cumbled (optional)
• Top or serve separately Pecan Sauce

i love vietnamese food!!! pho!! its my favourite. except my husband complains when i make vegan pho, so i can just his reaction to raw pho. i was actually thinking of playing around to try and invent a recipe for it, but i think that you are more qualified... i am waiting for what you come up with...

Hi DivineMissEm (nice name) - yes, you can leave the kelp noodles out - I would substitute it with thinly julienne green papaya or even spiral zucchini - why not right? The kelp noodles just gives it that noodooly taste I really like. Regular basil is okay, too not a problem! As long as you mix the basil with mint, you are good to go. Thanks for asking those questions.

This looks incredible! This is my favorite kind of meal to have. Two questions about substitutions. Would leaving the kelp out change much. 1. I don´t care for it when I prepare it myself and 2. it´s hard to find here. Also, would regular basil be an ok flavor change?
