Buckwheat 'Oatmeal'

Serves 2I have this for breakfast and it keeps me hopping till noon!
I usually sprout a cup of buckwheat over 2 days and I have enough to make 2 breakfasts (2 portions each)
Ingredients:
1 cup Sprouted Buckwheat
1 diced apple
2 tablespoon shredded coconut
8 soaked
dates
Preparation:
Blend everything in a blender (I’ve done it with a hand blender) until you have an ‘oatmeal’ like consistency. Add a little of the date soak water if you want it thinner.
Sprinkle cinnamon and nutmeg on top to taste
I’ve also made it with banana/date/almond
Sooooo good!

Everything I read on buckwheat and fagopyrin states it is buckwheat greens that contain the toxin. I haven't seen anything that discusses the fagopyrin levels in buckwheat groats that are soaked and then allowed to sprout for one to two days, which is the intent of this recipe and any raw buckwheat recipe I've seen.

This is great but please note sprouted buckwheat contains a naturally occurring toxin called fagopyrin, that can lead to rashes and sunlight sensitivity. More info:

I saw this and tweaked it, as we all seem to do to so many recipes. I swapped out the apple for a mango that needed eating. Then I added a touch of vanilla and a pinch of sea salt... that's it! Didn't need any sweetening after the mango. And like Damzlfly said, it keeps you going!!!

Do you use buckwheat with the hull off it, or unhulled?
And, how do you sprout hulled buckwheat?
