Brownie Sundae
Self explanatory :)
BROWNIE
1 cup almonds or walnuts, soaked or dry
½ cup
dates
2 tablespoon raw cacao or carob powder, more or less to taste
pinch good salt, optional
dash vanilla extract or bean, optional
BANANA ICE
CREAM
2 frozen bananas, in chunks
1 tablespoon coconut or raw cashew or almond butter, optional
pinch good salt, optional
1 teaspoon vanilla extract,
optional
SAUCE
1 young coconut, meat and some of the water
agave nectar to taste
tiny bit of salt and vanilla,
optional
1 tablespoon raw cacao powder or nibs, optional, for chocolate sauce
Process the brownie ingredients in the food processor until well combined and clumping together like a thick “dough”. Press into a pan or mold into shapes as desired. Dehydrate 1-5 hours if and as desired. Or chill to firm, or eat as is!
Toos the frozen banana chunks in the food processor with any of the additional optional ingredients and blend smooth. (Easier on the FP if you let bananas sit out at room temp for 5 minutes or so, or if you are impatient as I am, add bits of hot water to help it blend.)
Blend the young coconut meat adding coconut water as needed to blend, along with agave to desired sweetness. Once smooth and creamy, remove half and reblend remaining sauce with cacao if you want some chocolate sauce too. (There are also tons of awesome chocolate sauce and caramel sauce recipes floating around.)
Assemble and consume immediately.
**You won’t need to use the entire batch of the brownies, so you can store them in the fridge for future eating! You also might have leftover sauce.

i just tried this recipe and it is delicious! i didn't have time to make the sauce though but it was good without it anyways.

Just tried it for lunch. Only raw foodists can eat such things as a main dish for lunch!!! :0) The brownie mixture reminded me so much of lara bars, very good.

So glad everyone loves it as much as I do :) And harmonylia, that orange and ginger is a wonderful idea, I'm doing that next, as soon as I find orange extract...

Oh my goodness, this was quick (10 min start to finish) and yummy! I added a drop or two of orange extract to the banana and a 1/2 tsp of ginger and it really hit the spot for my sweet tooth! Thank you!

Yummy! Thanks for the inspiration. I made the ice cream with some pumpkin and nutmeg, cinnamon, and cloves, since we have an inordinately large number of pumkins here from the garden, and I try to use them up whenever I can! And I made the brownie, which I'm hoping will dry out a bit as I dehydrate it.
I also had some leftover "Gingerbread" from the recipe here that worked really well as a crumbly topping for this.
I never made it to make the sauce, both because I was really hungry, and because I don't have any young coconut. I was thinking of using some agave with some shredded coconut blended to a paste as a sauce. Maybe next time...

hmmmm well let's see: BROWNIE - process 1 cup walnuts with 1/2 cup dates and 2T cacao or carob powder. Press into a pan or form into bars/balls/etc. Set aside, dehydrate 3-5 hours or chill/freeze. BANANA ICECREAM - process 2-3 frozen bananas with 1T vanilla, pinch of sea salt, 1T coconut butter (optional) or cashew butter. either thaw bananas a few minutes first or add drops of hot water to help it blend smooth. COCONUT CREAM SAUCE - 1 young coconut, meat and some of the liquid, as needed to blend, 2-4T coconut butter and agave to make it as sweet as you like. Blend creamy; remove half and then blend remaining with cacao for a chocolate sauce. ASSEMBLE - Piece of brownie, layer of icecream, another piece of brownie, sauces! Hope that helps some. I was pretty vague in the OG post wasn't I?!
