Bok Choy Salad w. Papaya Mango & Tomato

2 main course saladsI made this for my husband and I for lunch today. We both loved it and so here I share it. The dressing the Nonfat Mango Dressing from Frederic Patenaude’s Instant Raw Sensations. It is simple, easy to vary, and delicious.
Ingredients:
1 cup yellow heirloom tomato, chopped
1 cup ripe mango, chopped
3 tablespoon fresh lemon
juice
¼ cup water
1 head of bok choy, sliced 1/2" thick
1 large tomato, chopped
½ large papaya
Preparation:
To make the Nonfat Mango Dressing place the first four ingredients into a blender and process until smooth.
Cut the papaya in to bite sized chunks.
Toss the dressing with the sliced bok choy, papaya chunks, diced tomato and whatever diced mango is leftover from making the dressing.
