Brazil nuts, lettuce and tomatoes in a creamy cashew sauce (mayo?). Another throw together (I gotta get organized), that came out quite good. The nuts are not soaked, but I will be tweaking the recipe from time to time

Put chopped brazil nuts in a bowl and put to the side.

In the food processor, place cashews, lemon juice, mustard, nutritional yeast, and a little water. Process till smooth and creamy.

Sprinkle the nama shoyu liberally over Brazil nuts and mix.

Pour or scoop cashew sauce (a little or a lot, save unused portion for other recipes) over the Brazil nuts and mix in.

Scoop the mixture over your favorite large leaf lettuce.

Top it with chopped tomatoes.

Wrap it up and enjoy.

I was the president some years back of "The Guardians of Gallifrey" a Doctor Who fan club out of Central Florida. The avatar is "The Face of Bo" from the new series (I fully admit to being a sci-fi geek).

That Brazil nuts as well as other exotic species and flora are being destroyed, is just one more reason to go Raw ans Vegan. The devastation of the rain forests will continue until it is fiscally viable not to do so.

What a screwed up world we live in.

My boyfriend says he wants to buy large leaf lettuce now that he saw this and try this recipe. He also wanted to know if your avatar is from Dr. Who. I made him a breakfast scramble with brazil nuts and he found a part of one that didn't get blended up and said he found a "tooth" in his scramble and couldn't eat the rest of it. I would always pick the brazil nuts out of mixed nuts because I didn't like them but I like them a lot more when they are blended up. Did you know it takes 45 years for a brazil nut tree to bare nuts?! And they may go extinct because of the devastation of the rainforest- so enjoy them while you can.
