Servings:
Serves 1 (Me) unless they are hidden away, I'll go through them in a day or so.

I posted this because it seems that I hardly ever see the word mushrooms in a raw recipe unless they are marinated in Nama Shoyu. (yuck) These are much better and they are 100% Raw.

Ingredients:

8 cup Chesnutt Mushrooms, broken into bits, then measured
1 Red Pepper, diced
1 Big Tight Handful Fresh Basil, chopped
3 clove Garlic, minced or pressed
2 tablespoon Olive Oil, blessed
½ tablespoon Salt, or to taste
½ Lemon, juiced
½ tablespoon Apple Cider Vinegar, un-pasturized

Preparation:

The Apple Cider Vinegar is optional, it really serves to speed up the marination time. With it marinate for 8 hours. Without it 20 hours. These times are optimal because you can eat these in a few hours if you want. Try not to eat them all before the marination time is up so that you can taste the ultimate final product.

Option: Add some diced green onion in a batch sometime for an added delight!

This was wonderful, but I used 1 clove of garlic and got terrible gas! Eeeek! But so, so good!! I just have to regulate how much I eat at one time, I guess! :)

This looks lovely, another one for the recipe box.

Sueko: chestnut mushrooms are common in supermarkets in the uk, they look like normal mushrooms, but they are brownish in colour and i think taste slightly more mushroomy, I also am under the impression that they keep a bit longer but i may be wrong on that one.

What are "chestnut" mushrooms? Will any kind of mushrooms work?

I blessed my oil. Thanks for the reminder. Food does become a prayer again for me.

This is great. I made it last night, and it had only marinated a couple of hours and still tasted great. The store was out of fresh basil so I substituted fresh mint. It tasted awesome.

When I posted this Mushroom recipe, I did it from memory because I have made it a lot recently and I know the items and quantities very well. My mistake was that I use these mushrooms that come in a package or what in the UK is called a punnet. I normally use 2 of these punnets for the recipe, and while posting the recipe I guessed that each punnet was about 2 cups of mushrooms.

I was way off! Each punnet actually makes 4 cups of broken mushroom pieces, not 2. I posted the recipe saying a total of 4 cups Mushrooms when it should have been 8. I realized my mistake when I made the recipe again last night and something told me to measure the Mushrooms.

I have learned my lesson and also changed the recipe so that it is now correct!

I’m sorry for any waste of time or mushrooms this may have caused.

Lovebows, Chris

I made these last night, and we had them today. We stirred them into raw pasta sauce and served it over spinach. It was wonderful!

I love mushrooms, I always wonder what to do with it besides putting it in my salads. I am definitely trying this, thanks!

That's ok Zoe I was being funny myself, and actually not because muslims really do say a prayer of sorts before they (for lack of a better word) slaughter the animals for meat and when starting something (like cooking).. but it was funny to see blessed oil.. hey maybe it tastes better that way? I'm going to try to make this in a day or two for our big celebration that's coming up (one of the two muslim festivals) I love mushrooms and we have them in the market now so it's a perfect time!

kurdish mom, my dear husband was trying to be funny about the oilve oil...he said that when you add ingredients he saw the box where it says "preparation" and so he put blessed! Ahh bless him!!

Any mushrooms would work, we are just crazy about chestnut ones at the moment.

Blessed olive oil? Just out of curiosity what is that? I'm wondering if it's an actual brand of oil or just oil you've said a prayer over?? and does that work with other denominations? (yes I was intending a joke there, sorry, couldn't help myself) also would white mushrooms work?? Cause they are locally grown here but that's the only kind we have... unless you count the wild, what-the-heck-kind-of-shroom-is-this? mushrooms, but I'm not brave enough to try them.
