Recipe Directions

CRUST

1. Mix the shredded coconut and nut butter together with a spoon or hands (I found it easier to mix with your hands).

2. To reach desired “doughy” consistency, add a few drops of water or agave nectar.

3. In a pan, use your hands to spread the crust, forming an even layer.

FILLING

4. Using your high speed blender or food processor, blend the coconut meat, agave nectar, and vanilla beans. You want to blend this until it reaches a custardy consistency. Taste test to see if it’s sweet enough.

5. Spread the filling out evenly on top of the crust.

CHOCOLATE TOPPING/FROSTING

6. Whisk together cacao powder and agave nectar. You can either make a third layer with this or you can use it as a sauce. It works great either or.

FINAL STEP

7. Decorate with fresh fruit and birthday candles.

This cake is definitely for the coconut lovers out there or for anyone with a major sweet tooth. (;

The trick is to this cake is saving up the meat. It usually takes me about 3 weeks to get the right amount for this cake.

I drink the coconut water and save up the soft coconut flesh in Tupperware. Once you have the coconut meat, this cake is quick and easy and so worth the energy.

Of course, this cake can be made for all occasions. ;)

These measurements are approximate, feel free to add more or less.

This sounds amazing! Yet at approx. $5 per Thai coconut and minimum $12 for the vanilla beans here plus the other ingredients where I live in Florida, we're talking a $60 or more cake!!! I do love raw, but it's sooo expensive at the same time to make so many of the recipes I know I would absolutely love.

Do you have any asian markets that you could find the young coconuts in? I only spend about 1.50 per fruit at my local asian market.

Best Birthday Cake Ever (Coconut Custard Cake)

I just made a 1/4 batch of this. That way, it only required 3-4 coconuts. It turned out excellent.

The only changes I made were: I added some shredded, dried coconut to the blender when I made the custard mix, to thicken it up, and instead of making the chocolate topping, I just added 1 tbsp (4 tbsp for a full batch) of cacao powder to the custard. Then I put it all together, chilled it for an hour, and I was in coconutty, chocolaty heaven. :)

Lauraj, I get my thai coconuts for $1.49 and I live in Florida. They are not organic, but they do the trick.

Lauraj, you could probably order some non-organic vanilla beans online for cheap. I pay only $1 for a non-organic v. bean at a store nearby. As far as young thai coconuts are concerned, look around, ask the stores how much a case would be if you were to special order? Sometimes, stores will mark down the price if you order in bulk. I pay $16 for 9. Good luck!
