Basic Brown Bread

Basic Brown Bread
Servings: 
Makes 16 thickish slices or 32 very thin ones

This mild bread reminds me of the brown bread you can buy in the local bakeries around here – slightly sweet and whole-grain flavoured. My favourite way to eat it is as a cream cheese and ‘jelly’ sandwich as pictured above.

Ingredients: 

1 cup water
1 cup sunflower seeds, hulled
1 apple - I prefer Rome for this
1 small summer squash
¼ cup black sesame seeds
1½ cup flaxmeal, very finely ground
½ teaspoon sea salt

Preparation: 

IN your blender, blend water and sunflower seeds until smooth. Add the apple and blend until smooth. Add the summer squash and blend until smooth. Add the sesame seeds and blend briefly.

Pour into a mixing bowl. Add the flaxmeal and salt.

Spread onto two teflex sheets – I like to spread mine to 3/8th inch thick, but you could make it thinner. Score into slices.

Dehydrate at 105 degrees for 4 hours, or until the top is dry. Flip over (I separate them at this time) and dehydrate for another hour or so (you’ll need a bit more time for thicker slices).

I'll add this to my growing arsenal of bread recipes. I tripled the recipe and only added 2 apples, so it's not too sweet. This satisfies my bread cravings. I like it plain or with avocado, tomato and sprouts.

I added a little onion and olive oil and subbed 1/3 the flax meal for chia seed meal. Very delicious. The drying time was much longer than described. I did 4 hours at 115F, flipped and then 6 hours more. Even then it was still a little moist inside. Next time I think i will poke a fork all over the bread to see if that will increase dring speed.

Hi! I measured everything very carefully and didn't sub anything out except white sesame seeds for black. Anyway it came out very flax slimy inside so I've been drying it now for 22 hrs and it's dry all the way through but it still has a gelatinous slimy feeling once it's chewed. Is some flax more slimy than others? Maybe I'll try this again and substitute almond meal for some of the flax.

This recipe marks the last time I ever leave my house while using my oven as a dehydrator. Can you say burnt?

But the part that didn't turn black and crispy was delicious.

Feebee45: Hulled means that you want to take the casing off and use only the kernel of the seed.

feebee45 - I think the squash lends a bit of bind and pliability to the bread that onion may not. It's always worth experimenting, though. Let us know how it goes and have fun!!

Hi,
I am new to making my own raw foods. I just got a dehydrator as a gift. I have been buying raw foods and I feel this will save me alot of money. I have a question because my first try this weekend will be this bread. Can someone help me?

What are "hulled" sunflower seeds? I just bought RAW sunflower seeds, will this work?

Do you think I could substitute Chopped onions for the squash? I read all about the onion bread and EVERYONE seemed to love it. Id like to kinda mix the two types - because this one looks very good to me. Does anyone have any suggestions for me? Thank you so much :)

I didn't soak the seeds.

IN place of summer squash you could use pureed squash or sweet potato (I like yellow yam). Juice it, then recombine the pulp and juice, or be lazy like me and blend it. You'll need to blend it longer, though.

Another option is to use another apple - this will make it a bit sweeter, though.
