Banana Coconut Smoothie

Serves 2Nutritious, thick and yummy!
Ingredients:
11 ounce coconut water
½ cup soaked cashew nuts
2 frozen bananas, in
chunks
2 tablespoon Artisana coconut butter (not oil)
¼ teaspoon vanilla
Preparation:
- Pour coconut water and cashews in blender; blend until smooth.
- Add bananas, blend until smooth.
- Add coconut butter and vanilla and blend until smooth.
Enjoy!
PS I winged this recipe. I used an 11 ounce container of Vita Coco coconut water; we had a couple of bananas in the freezer, I’d soaked some cashews yesterday and we bought a jar of Artisana coconut butter this past weekend. It’s a forgiving recipe. You can always add more or less of any given ingredient. If you have a VitaMix, this will come out smooth as satin … but even my cheapo Black and Decker made quite a decent smoothie.
