Baby spinach and orange salad

Serves 4A tasty and filling salad – one of our favourites!!
Ingredients:
1 pound baby spinach, washed
3 oranges, peeled, separated into segments and cut in half
1 cucumber, cut into
rounds
1 red onion (medium-size), thinly sliced
1 cup walnuts, chopped coarsely
1 tablespoon lemon juice
1 tablespoon olive
oil
1 teaspoon agave syrup (or honey if preferred)
½ teaspoon whole grain mustard (okay, I know it's not really raw but makes a nice dressing)
Preparation:
Combine all ingredients, except for the last four, in a salad bowl. Prepare the dressing by mixing the lemon juice, olive oil, agave syrup (or honey) and mustard. Pour over the salad and toss lightly to coat. Enjoy – it won’t last long…

I just made this. It was really really good. I used regular spinach, green onions, and 2 oranges instead of 3. I added a little dash of salt and pepper too. Despite these substitutions, it was delish! Thanks.
