B & B Layers

I decided to play around with oat groats and discovered this ensamble...it's delicious!

Ingredients: 

Chocolate Banana Oat Groat Crackers
(this can be eaten by itself or used for dipping cacao fondue or cashew whipped cream)

1 cup oat groats, soaked overnight
4 bananas
2 large dates, pitted and chopped
tsp vanilla
1 tbsp raw cacao, add more if you want darker flavor

Cashew Whipped Cream

cashew, soaked overnight
1 tsp lemon juice
1 tbsp agave nectar

Preparation: 

Chocolate Banana Oat Groat Crackers

Place all ingredients in food processor and process until smooth. Spread on teflon and dehydrate overnight or until cracker texture.

Cashew Whipped Cream

Place all ingredients in vitamix or high speed blender. Blend until smooth and creamy. It should not be runny. Refrigerate to chill.

Assembly:

Break a piece of the cracker and place whipped cream on top. Add blueberries or favorite fruit - berries work best. Layer another cracker on top and repeat whipped cream and fruit. Service chilled.

I made a similar sweet cracker the other day and used coconut butter on top because I had no nuts on hand, another idea is pureed banana with some vanilla for a topping!

Oh. My. Gosh.
I didn't know what to expect when I clicked on the recipe title and my mouth instantly started watering.
Does anyone have any suggestions to substitute for cashews? I try not to buy them as they're expensive and my last ones got all moldy before I could eat all of them.
