Recipe Directions

CRUST

1. Food process almonds into crumbs.

2. Add dates, olive oil, and salt and process until mixed.

3. Press into pie pan.

FILLING

4. Combine all ingredients in a food processor or blender.

5. Blend until smooth. If it doesn’t seem thick like pudding, add another tablespoon ground flax seed. Add another date or two if more sweetness if desired.

6. Spoon into pie crust.

7. Refrigerate.

I’m not crazy about it, but I haven’t come up with a better one yet.

Use whatever pie crust is your favorite and it should work fine.

The crust recipe is from another source, which I've now credited, so I just copied that directly. I usually soak the dates because they blend a bit easier that way, but it isn't truly necessary for either the filling or the crust. I use sayer dates because they're super cheap around here - they're similar in size to medjool dates, and I use them in recipes that call for them.

This looks really good. It seems like it would be more like graham cracker crust if you added half pecans and cinnamon to the crust. This is such an unusual combo! Wow!

Sounds yummy! So there are 7 pitted dates total, but soak only 4 of them and the other 3 don't soak? What type of dates did you use? Thanks :)
