The excessively cheesy name is because I literally dreamed up this recipe, and I’m not even crazy about avocado! Spiced similarly to pumpkin pie, it would be good for a holiday dessert.
The crust is from Jinjee and Storm Talifero’s Raw Apple Pie recipe in The Complete Book of Raw Food (which is another truly delicious pie). I’m not crazy about it, but I haven’t come up with a better one yet. Use whatever pie crust is your favorite and it should work fine.
1 cup almonds, soaked for at least 4 hours
2 tablespoon olive oil
salt to taste
...or use your favorite raw crust
3 pitted dates
2 ripe avocados
4 pitted dates, soaked until soft
3 tablespoon ground flax seed
¾ cup orange juice
¼ cup coconut milk
½ teaspoon cinnamon
½ teaspoon ginger
½ teaspoon nutmeg
1 teaspoon vanilla
1 pinch salt
Food process almonds into crumbs. Add dates, olive oil, and salt and process until mixed. Press into pie pan.
Combine all ingredients in food processor or blender. Blend until smooth. If it doesn’t seem thick like pudding, add another tablespoon ground flax seed. Add another date or two if more sweetness if desired.
