Italian olive Salad is just Green Olives(Preferably with Pimentos) and a variety of Coarsely chopped veggies in Olive Oil and spiced to your liking... Carrots, Celery, Black Olives, Red Bell Peppers, Cauliflower, Parsley, Oregano, Garlic, Etc...

Do you make your own Italian olive salad? It doesn't sound raw...pimiento stuffed olives are usually cooked pimiento peppers.

Enjoying some right now, though without pimentos, didn't have any in. Loads of garlic for me as I love it.

Something this good shouldn't be so easy.
