Avocado and coconut-free Chocolate Mousse Heaven

Servings:
makes 1 big Cup or 2 servingsThis is for Diana’s dilemna. In the end, you need 1/2 C of liquid (clementines), so you can sub a rasberry/water mixture or for milkier mousse, use raw almond milk instead of the clementines.
Ingredients:
1 cup raw cashews, soaked 4 hours
3 pitted dates, soaked just to soften-30 min.
1 tablespoon Raw agave
nectar
1 tablespoon vanilla
2 tablespoon raw cacao powder
2 clementines, peeled only
1 twist of orange or clementine peel, for garnish
Preparation:
Simple. it all goes in the vita-mix for some serious whipping! Garnish with a mint leaf or cacao nibs.

I really enjoyed this one, I made the mistake of doubling the recipe though, which is a double-edged sword, it's so good I know I'll eat it all over the next day or so but it made more than I expecting(you know how they say your eyes are bigger than your tummy). Thank you for an alternative to the regular avocado based mousses.

Oh, Thank you!!! Yes,debbietook. this a soaked only nut recipe if you want it to really whip like a mousse. After refrigerating it, i thought it was fluffy still and thicker--even more yummy? This will be great in a nut/date/cacao crust. Angie, I'm not sure about the pine nuts, but macadamias would work. I like pine nuts for more savory things and nut 'cheeses". What are you limited to for your nuts now?
I also ate my friday night remainder for my Saturday breakfast, amysue LOL.

I made this today and served it to my family. I used seeds scraped from one vanilla pod instead of (liquid?) vanilla. They loved it. Son said 'mmm...does this have alcohol in it?' (can only imagine it was the clementines reminding him of orange liqueur?!). It's a 10/10 chocolate dessert. The cashews definitely need to be soaked. I say this because I soaked half of them and, realising that I'd need to make quantity for 4, added some dry ones. If I'd soaked them all until soft, the dessert would have been smoother. But it was still terrific and thank you enormously for a choc mousse which, for once, doesn't have banana or avocado in it!

I'm eating this for Sunday breakfast right now and I'm so happy, it's soooo GOOD! I was too impatient to soak the cashews, so I didn't, and I used little blood oranges instead of clementines since that's all I had and it's still perfect, thank you!!

Although I love avocados, I'm not that mad on choc desserts with them, and this makes a refreshing change!

For a lady who never makes such yummy or fancy things...I must say I have all of these ingredients and have a free day tomorrow..if I do I will let you know how mine turns out.....only thing I need is clementines.
