Recipe Directions

1. Shred the carrot and the zucchini. You can either do this by hand grating or putting it through the processor. I grated. 

2. Place them in a bowl with the hydrated seaweed and oyster mushrooms.  

3. Mix up all of the dressing ingredients and add more vinegar or water if it's too thick for your taste.

4. Sprinkle everything with the sesame seeds.

I just got home from college for the weekend and arrived to see beautiful veggies that my mom bought me!

Not having access to good raw food for awhile, I needed to make a delicious creation for dinner and this is what I came up with.

I just made this and accidentally forgot to put in the seaweed... It was good, but when I finally remembered the seaweed, it was GREAT! I used some toasted seaweed (not raw, but still healthy) and the dish is filling and delicious.
