My boyfriend bought me a Vita-Mix for Christmas, and I would have opened it on Christmas had the deliveryperson followed directions and didn't leave it on the front stoop for me to run into when I came home :(
This recipe was adapted from the Vita-Mix website (http://vitamix.ahoy.com/recipe/recipe.cgi/0/122/). He had no idea I 'tweaked' it; I fed it to my SAD friends and they LOVED it. Just in time for winter, too!
3 cups of butternut squash, cubed
1 large apple, quartered
1 tablespoon olive oil
1/4 small onion (I added a handful of green onions, too)
garlic clove
1/4 cup almond pulp
1/4 teaspoon thyme
1/8 teaspoon salt
1 1/3 cups almond mylk
1. Pour last four ingredients into blender and let go until just warm.
2. Add rest of ingredients until creamy.
3. Garnish with chopped green onion leaves.
This is a great recipe! Another use for almond pulp - yay!
Yea, my boyfriend is a keeper. Its funny because he eats a SAD diet and thinks I've gone too far with going completely raw and wishes I would go back to eating sushi with him, then at the same time makes raw life easier for me and buys me a dehydrator and food processor for my birthday and a Vita-Mix for Christmas. I can't figure him out.
But yes, the soup was amazing. As has anything else that has come out of that Vita-Mix!
