Amazing Nachos! delish!

The picture shows this compilation of recipes from this site- just changed a little. I added jalepenos to the cheese sauce. I added jicima to the sour cream recipe. I made corn chips with flax meal and corn. I also made a fake bean dip (not pictured) with artichokes, red pepper, and red onion, cumin and garlic. Guacamole would also be good with a garnish of black olives.

I used Kandace's Spicy Tortilla recipe, accidentally left it in the dehydrator too long so cut them as as chips instead.... nice and crispy! I didn't pile everything on top though, just dipped the chip in the toppings.

This looks great. I made something like this the other day: chips, "refried beans", sour cream (my recipe), a cheddar cheeze sauce, tomatoes, bananna peppers and olives! So yummy! I do my sour cream with french onion to make french onion dip! It is so versatile!

I haven't been able to make a crispy chip yet but mine are substantial enough to hold all the dips. You may need to make a thicker chip to hold all of the dips like mine.

I can't tell you how great these recipes are. The sour creme and nacho cheese are so good anyone would eat them. That's all my boyfriend had for dinner last night and he was satisfied! He was a little nervous about eating "all those nuts" because of their fat content but just think how much fat someone is eating with typical nacho cheese! And the nut fats are good for you!

The sour creme would also be great as a chive dip or as a filling for itallian recipes that call for ricotta. I was even thinking it would look just like cottage cheese and would be beautiful in a cantalope for lunch.
