Recipe Directions

CRUST

1. Process the ingredients in a food processor until you see no raisins.

2. Press that into your pie dish evenly. Make sure you go up the sides of the pan. Preferably a pan with an angled edge. It's easier to get the cake pieces out.

FILLING

3. Food process the filling ingredients and spread that filling all in there.

4. Put it in the freezer for a few hours. After that, you can eat it all or put it in the refrigerator.

This is definitely the way to go about getting cheesecake.

Personally, it's too much sugar for me. It's great for my junk food junkie little brother.

Side notes:

Any oil should be in an amber glass jar to prevent oxidation. Otherwise it becomes rancid.

Ground flax seeds fresh, since they perish very rapidly.

Use raisins. You can get into trouble with dates with some people.

This was Really Excellent! I made it for Shavuot (Jewish holiday, traditionally serving dairy foods, especially cheesecake!) I would definitely make it again! I put blue berries on top. Everyone that tasted it was like "wow"!
