Cauliflower and Celery are waiting for you along with the Eggplant (what a wrong name for such a versatile veg. – Jewelplant better!)
SLICe you beautiful eggplant to a not thin/not thick nt/nt, “Bread”, reserve at least half for dehydrator, and keep the lunch/supper? portion of thin sliced SUSHI variety on hand for outrageously good meal.
OK tomorrow I eat the dehydrated Bread version of this recipe, man my mouth is watering! Also had room in the Homey Dehydrator for the portabello and eggplant slices. Looking forward to making Chili!!

I ate it raw yesterday (omshanti's baba ganoush, this website) and it was delicious and I lived to tell about it! I eat raw eggplant a lot, no problems. Try the raw bac-un recipe, you'll be a convert!
2.
I have been wondering about eggplant, too. The book in the produce section at my local grocery store says it should always be cooked.
3.
Veggie broth? Wouldn't that be cooked (processed)?
4.
Hey Fresh, 'por 'ol tomato was an ornamental garden thing until 1700's, right, eggplant is of the ill famed nightshade family ... but enough of that, Try It! Maybe the new sandwich instant "bread", no hours of dehydrating required!

Okay--maybe just the leaves are toxic....
6.
I thought eggplant was poisonous raw...?

Sorry ilikenuts, the ingredient list is not clear that 1 cup of eggplant is chopped or cubed, and the rest is reserved for "bread" slices. Cauliflower suffers same fate, 1 cup into mix, rest for dipping. Celery sticks (4-5 sticks) left for stuffing. Trying to keep watery veggies - on the side since most of this goes to the dehydrator for "bread" experiment. No excuse, but I was prepping up a natural Chili with the portabello's and all - man it tastes beauuutiful!! Thanks for the question.

Im drooling! even though i feel space out and its only 7am here...! the eggplant part is quite confusing though, you use it as the bread with the salsa and where do the cauliflower go?

Man I forgot to include my wet ingredients, 1 cup veggie broth, (3 tblspn) Extra Virgin Olive oil. Included the water from pimento's.
The result is really Almost Heaven - watch those peppers!
